Artificial Flavor
A flavor substance not derived from natural sources. Created through chemical synthesis to replicate or create desired taste profiles.
Beverage Kit
A pre-measured, pre-packaged bundle of all ingredients needed for a production run, shipped directly to a copacker to simplify supply chain management.
Clean Label
A product formulation approach using ingredients that consumers recognize and understand. These ingredients are typically natural, minimally processed, and free from artificial additives.
Copack / Copacker
A contract manufacturer that produces finished goods (typically beverages) on behalf of a brand owner using supplied formulations and ingredients.
Encapsulation
A technique that coats flavor particles in a protective shell, improving stability, controlling release, and protecting against degradation during processing.
FID (Formula Identification)
The identifier TTB assigns to an approved flavor formula for use in alcoholic beverages. An approved FID sheet documents that a flavor has cleared TTB review and states how it may be used.
Flavor House
A company that specializes in creating, manufacturing, and supplying flavors to food and beverage manufacturers. Also called a flavor company or flavor manufacturer.
Flavor Profile
The combination of taste, aroma, and mouthfeel characteristics that define a specific flavor. For example: 'bright citrus with floral undertones and a sweet finish.'
GFSI
Global Food Safety Initiative, a business-driven coalition that benchmarks food safety standards. SQF is one of the GFSI-recognized certification schemes.
GRAS
Generally Recognized As Safe, an FDA designation for substances that are considered safe for use in food based on scientific evidence or long history of use.
Kosher Certification
Certification that products comply with Jewish dietary laws. Allen Flavors holds OU (Orthodox Union) certification, the world's most recognized kosher symbol.
Natural Flavor
Per FDA (21 CFR 101.22): a flavor derived from natural sources such as fruits, vegetables, herbs, spices, or other plant/animal materials through extraction, distillation, or other physical processes.
N&A (Natural & Artificial)
A flavor that contains both natural and artificial flavor substances. Labeled as 'Natural and Artificial Flavors' on product packaging.
NOP (National Organic Program)
The USDA program that regulates organic agricultural products, including organic flavors. Sets standards for production, handling, and labeling of organic products.
Oil-Soluble Flavor
A flavor designed to dissolve in oil or fat-based systems. Used in applications like chocolate, confections, and fat-based coatings.
Organic Flavor
A flavor produced using certified organic source materials per USDA NOP standards. Requires third-party certification from an accredited body like QAI.
Plating
A powder flavor manufacturing technique where liquid flavor is absorbed onto a dry carrier (like maltodextrin or modified starch), creating a free-flowing powder.
QAI
Quality Assurance International, an accredited USDA organic certifying agency. Allen Flavors is QAI certified as both an organic handler and processor.
Sensory Evaluation
The scientific discipline of using human senses to evaluate food products by assessing appearance, aroma, taste, texture, and overall acceptability.
Spray Drying
A technique that converts liquid flavor into powder by spraying it into a hot air chamber, rapidly evaporating moisture to produce fine, uniform particles.
SQF
Safe Quality Food, a GFSI-benchmarked food safety and quality program. Allen Flavors holds the SQF Food Safety & Quality Code certification, the program's most comprehensive tier, adding quality management on top of food safety.
TTB
Alcohol and Tobacco Tax and Trade Bureau, the federal agency that regulates alcoholic beverages in the United States, including approving flavors for use in alcoholic products.
Water-Soluble Flavor
A flavor designed to dissolve in water-based systems. The most common format for beverage applications.
