Flavor Science & Formulation
10Popular: What is the difference between natural and artificial flavors?Popular
Under FDA regulation 21 CFR 101.22, natural flavors are derived from plant or animal sources through physical processes. Artificial flavors are synthesized chemically and not derived from natural source materials.
What does FEMA GRAS mean?
FEMA GRAS stands for Flavor and Extract Manufacturers Association Generally Recognized as Safe. The FEMA Expert Panel evaluates flavoring substances for safety, with approximately 2,800 ingredients currently carrying FEMA GRAS status.
How does taste masking work?
Taste masking uses complementary flavor compounds, bitterness inhibitors, sweetness enhancers, and mouthfeel modifiers to counteract unpleasant tastes of functional ingredients like proteins, vitamins, and adaptogens.
How do you ensure flavor stability?
We test every formulation in the target application matrix under conditions simulating real-world processing, storage, and shelf life, adjusting to ensure flavor retains intensity and character.
What is flavor encapsulation?
Flavor encapsulation encloses volatile flavor compounds within a protective carrier matrix (maltodextrin, gum acacia, or modified starch) to shield from oxidation, moisture, heat, and light.
How are spray-dried powder flavors made?
Spray drying converts a liquid flavor emulsion into fine powder by atomizing it into hot air. The carrier material forms a protective shell around flavor compounds, extending shelf life.
What is the difference between water-soluble and oil-soluble flavors?
Water-soluble flavors dissolve in water-based systems like beverages and dairy. Oil-soluble flavors dissolve in fat-based systems like chocolate and baked goods. The choice depends on your product's base.
How do you approach sugar reduction without sacrificing taste?
We use sweetness-enhancing compounds, bitter blockers for stevia and monk fruit, mouthfeel modifiers to restore body, and strategic flavor profiling that creates sweetness perception through aroma cues.
What is a flavor modifier?
A flavor modifier alters perception of other tastes rather than adding distinct flavor. Examples include sweetness enhancers, salt enhancers, bitter blockers, cooling agents, and mouthfeel modifiers.
Can you create heat-stable flavors for baking?
Yes. We formulate bakery flavors engineered for heat stability through baking temperatures up to 400 degrees Fahrenheit, using high-boiling-point compounds and encapsulation techniques.
Organic & Natural Flavors

Do organic flavors cost more than natural flavors?
Organic flavors typically carry a price premium due to higher-cost certified source materials, dedicated processing requirements, and certification audit costs.
What is the Strengthening Organic Enforcement rule?
The SOE rule, the most significant NOP update in 20+ years, introduced mandatory certification for importers, electronic NOP Import Certificates, and strengthened supply chain fraud prevention.
Can natural flavors be used in organic products?
Under NOP Policy Memo 11-1, natural flavors may be used in "Organic" (95%) products only when the organic version is not commercially available and the flavor is nonsynthetic.
Beverage Kits & Supply Chain

A typical kit contains all ingredients for a production batch: flavors, sweeteners, acidulants, colors, and functional ingredients, pre-measured to your exact batch specifications.
Can beverage kits include organic or kosher ingredients?
Yes. Our kits can include QAI-certified organic, OU Kosher, and non-GMO ingredients with complete documentation.
How do beverage kits reduce production errors?
Our beverage kits are unitized to 1,000 gallons, which doesn't require physical weighing of ingredients. Pre-measuring eliminates incorrect ingredient quantities, the most common source of production errors.
Can beverage kits scale as my brand grows?
Yes. As production volumes increase, kits scale proportionally with no need to re-qualify or onboard additional suppliers.
Do you ship beverage kits directly to my copacker?
Yes. Kits ship directly from our SQF Food Safety & Quality Code Certified facility to your copacker, coordinated with your production calendar.
How does the kit program work with private-label products?
Beverage kits are well-suited for private-label brands using copacking partners. You own the formulation, we assemble ingredients into kits, your copacker manufactures the finished product.
What is the minimum order for beverage kits?
We offer flexible minimums depending on your product complexity and production schedule. We support everything from pilot runs to full-scale production. Contact our team for a custom quote based on your specific needs.
