  3. What is an allergen report?

FALCPA (Food Allergen Label Consumer Protection Act) requires that food manufacturers label food products that contain ingredients, including a flavoring, coloring, or incidental additive that are, or contain, a major food allergen using plain English to identify the allergens.

There are eight major food allergens identified by FALCPA which account for over 90 percent of all documented food allergies in the U.S. and represent the foods most likely to result in severe or life-threatening reactions. They are milk, eggs, peanuts, tree nuts (such as almonds, cashews, walnuts), fish (such as bass, cod, flounder), shellfish (such as crab, lobster, shrimp), soy and wheat.

All products leaving Allen Flavors with any ingredients derived from these eight categories is accompanied by an allergen report.

This is a difficult question because formulations can actually take shape in a few weeks; but, the prototype may need adjustments to meet your sensory expectations. Some products require more time because “good for you” ingredients or “function” ingredients can sometimes be difficult to work with. There are other factors at play here as well. Openness, honesty and trust are the base of our relationship with every customer. Intellectual property is of the highest importance. We require a nondisclosure agreement when starting every new relationship.

  14. What is a flavor profile?

A flavor profile contains organaoleptic information. These descriptions can be so esoteric that our sensory experts disagree on the exact verbiage to describe a flavor. Generally there is a base, such as strawberry for example. The strawberry can take on mouth feel such as jammy or sparkling, the bouquet might be fresh and flowery or plump and ripe. The visual appeal might be crystal clear, rich red or a translucent pink. It’s ultimately up to you!

  15. Do my ingredients need to be refrigerated?

Again, the Allen Flavors development team can generally tailor your ingredient mix to your specifications. If, due to the innate nature of the ingredient, refrigeration is necessary, it presents no problem for us. We will make sure all handlers and co-packers are aware of the proper handling requirements.

  16. Are there sometimes ingredients “left over” after a production run?

Seldom are ingredients left over. We do our very best to “unitize” our premixes and formulations to fit your chosen co-packer’s manufacturing capacity. We also provide documented easy to use procedures for every formulation. This is not to say there never discrepancies. Mixing thousands of gallons of product and packing it in hundreds of thousands of small containers is not always an exacting process. Most co-packers bill for finished cases and any ingredient overage would be sealed and stored or returned to you per your arrangements with the bottler.
